In the illustrious terrains east of Paris, Champagne emerges from its humble beginnings, rooted in the dedicated efforts of families growing Chardonnay, Pinot Noir, and Pinot Meunier vines. This revered region, encapsulated by rolling hills and a tapestry of 5,000 growers, spans an impressive 35,000 hectares, meticulously overseen by the CIVC (Comité Interprofessionnel du vin de Champagne).

Nestled among the gentle hills of Champagne, the vines stretch across the landscape, tended with the distinct 'Chablis' pruning method that keeps them growing unfathomably close to the ground. This unassuming terrain of Champagne is not immediately striking for a region that crafts such esteemed wines, yet every hectare of vineyard land can sell between 1 and 4 million euros. The essence of Champagne lies in the detail. When producing Champagne, the CIVC sets an annual yield limit in the vineyards and allows wineries a maximum yield of 2,550 liters per 4 metric tons of grapes. The legal alcohol range is between 9-13% abv, which is determined after a minimum of 15 months of bottling conditioning before the product can even begin to start preparing for sale. The classification by dosage levels further underscores the meticulous craftsmanship, where the exact blend of sugar in each bottle's proprietary liquor remains a closely guarded secret of its producers.
